Super Quick, Super Delicious White Chocolate & Raspberry Muffins

These muffins are first and foremost, SO delicious. But second to that, they are so easy to cook – prep time is genuinely under 5 minutes unless you are seriously challenged when it comes to baking. Please note, they only make about 8 decent sized servings, so if you’re planning to bake for your a group I would double the recipe. So here you go… Ingredients: 1 3/4 cups self raising flour 2/3 cup caster sugar 200g white chocolate, roughly chopped 1 egg, beaten 1/2 cup sour cream 1/3 cup milk 100g butter, melted 1 1/2 cups fresh or frozen raspberries Method: Preheat oven to 180 degree (fan forced, slightly higher if not). Line an 8-cup muffin pan with large paper muffin cases. Sift flour into a large mixing bowl. Stir in the sugar and chopped chocolate. Whisk together egg, sour cream, milk and melted butter. Add to the flour mixture and stir until just combined (make sure you don’t go over the top with the mixing or they won’t be fluffy!). Gently fold in …

The Chewiest Choc-Chip Cookies Goin’ Round

I used to make these cookies far too often. Now, they’re a serious treat. These are always my go-to choc-chip cookies because they are amazingly soft, chewy and moist (yes I know you’re cringing at me using the word moist but it IS the best adjective in baking speak). I’m not one to share my top secret recipes, but I’m feeling extra generous, so here’s both the best AND the easiest choc-chip cookie recipe you’ll find. Oh and yes, the dough is to die for and I generally eat half the mixture before it goes in the oven.    Ingredients Checklist: 1 cup self raising flour 1 cup brown sugar ½ cup butter (softened) 1 teaspoon vanilla essence 1 tablespoon golden syrup (the key to chewy cookie success!) Not a week goes by that I don’t venture out into the burbs’ to get my breakfast/brunch fix. I live for those weekend days that I get to catch up with friends and eat good food and drink good coffee. Isn’t that what life is about? Melbourne IS the café capital of Australia (even if I do say so myself. For 25 years, although the tradition was born in Paris, cities all over the world host an annual dinner unlike any other. Melbourne Brunch Spots – My Top 3 This Month

Catching up with friends for lunch? Please. Everyone knows it’s all about ‘brunch’ these days; a perfect midway point between breakfast and lunch where it’s still acceptable to order eggs and bacon (let’s be honest when is it not acceptable to order eggs?) but it’s also cool if you head straight for the burger option. I’m obsessed with Melbourne’s world class café culture and I’ve nutted out my top three brunch spots (at least these are my faves right now), which you should check out immediately. Number ONE Merchant’s Guild, 380 Centre Road, Bentleigh East Okay, so I’m a little lot obsessed with this place. My sister (who is equally if not more obsessed than me) introduced me to Merchant’s Guild back in 2013 when it first opened.
