Super Quick, Super Delicious White Chocolate & Raspberry Muffins

These muffins are first and foremost, SO delicious. But second to that, they are so easy to cook – prep time is genuinely under 5 minutes unless you are seriously challenged when it comes to baking. Please note, they only make about 8 decent sized servings, so if you’re planning to bake for your a group I would double the recipe. So here you go… Ingredients: 1 3/4 cups self raising flour 2/3 cup caster sugar 200g white chocolate, roughly chopped 1 egg, beaten 1/2 cup sour cream 1/3 cup milk 100g butter, melted 1 1/2 cups fresh or frozen raspberries Method: Preheat oven to 180 degree (fan forced, slightly higher if not). Line an 8-cup muffin pan with large paper muffin cases. Sift flour into a large mixing bowl. Stir in the sugar and chopped chocolate. Whisk together egg, sour cream, milk and melted butter. Add to the flour mixture and stir until just combined (make sure you don’t go over the top with the mixing or they won’t be fluffy!). Gently fold in …

New Kids On The Block: Brunch Spots

Not a week goes by that I don’t venture out into the burbs’ to get my breakfast/brunch fix. I live for those weekend days that I get to catch up with friends and eat good food and drink good coffee. Isn’t that what life is about? Melbourne IS the café capital of Australia (even if I do say so myself. But it is okay) and competition is getting intense with new spots popping up every weekend, or so it seems! Of course I take it upon myself to try each and every one – that’s right, taking one for the team guys! Here are my top three recent discoveries. ONE: Walk Don’t Run, 17 Morey Street, Armadale  For those who know me, you will be well versed in my obsession with Merchants Guild – a café in Melbourne’s Bentleigh East area. I’m still yet to find a breakfast, brunch or lunch spot that satiates my cravings the way Merchants does. I love everything about it; the vibe, the coffee, the food and the service. So, …

Melbourne Brunch Spots – My Top 3 This Month

Catching up with friends for lunch? Please. Everyone knows it’s all about ‘brunch’ these days; a perfect midway point between breakfast and lunch where it’s still acceptable to order eggs and bacon (let’s be honest when is it not acceptable to order eggs?) but it’s also cool if you head straight for the burger option. I’m obsessed with Melbourne’s world class café culture and I’ve nutted out my top three brunch spots (at least these are my faves right now), which you should check out immediately. Number ONE Merchant’s Guild, 380 Centre Road, Bentleigh East Okay, so I’m a little lot obsessed with this place. My sister (who is equally if not more obsessed than me) introduced me to Merchant’s Guild back in 2013 when it first opened. If you were to drive past, unknowingly to its existence, there’s no way you’d stop or even notice this spot. But don’t be fooled. This place is PACKED every single day – even on a Monday…and for good reason! The food: The menu changes seasonally, as do …
